Favorite Holiday Recipes - Cranberry Fruit Nut Bread

RJ's mom has been making this bread since she was a child. It has a bright light taste.

Preheat oven to 350 degrees

2 cups of sifted all-purpose flour

1 cup sugar

1 1/2 teaspoon baking powder

1 teaspoon of salt

1/2 teaspoon of baking soda

Sift together dry ingredients. Cut in 1/4 cup of shortening.

Combine in a separate bowl:

1 teaspoon grated orange peel

3/4 cup of orange juice

1 well-beaten egg

Add to dry ingredients mixing just to moisten.

Use your Tip Tough to stay safe as you coarsely chop 1 cup of fresh cranberries and 1/2 cup of walnuts. Fold them into the batter. Turn into a greased 9x5x3 pan. Bake for 60 minutes. Cool, wrap, and store overnight - this bread is better the next day.
