We are going back at least 50 years for this recipe from RJ's Great Aunt Sara. One of the main ingredients is Vigo Seasoning and back in the day we could only get it when she went back to visit friends in Florida. I mean our family held on to packets of Vigo like GOLD! RJ's mom Lori converted this to a crockpot recipe.
In a crockpot put:
3 frozen chicken breasts
Use your Tip Tough to cut up 1 onion, 1 green pepper, 4 stalks of celery and add to the pot
1 Tablespoon garlic
2 cans of diced tomatoes (14.5)
1 1/2 cups of water
1/2 teaspoon of salt and 1/2 teaspoon pepper
2 packages of Vigo Seasoning (True Spanish flavor Flavoring and Coloring for Yellow Rice and Chicken each packet is 1/28 oz or 1 gram)
Cook it on low until the chicken is done. Before serving add 1 can of rinsed black beans and shred the chicken, return to the pot. Add 2 cups of Minute Rice and cover. Ready to serve in 10 minutes and serves 6 people.
